Calling this Rhizome Cake, it’s sweet, not savory. A Japanese fluffy cake, made with my own cultured vanilla yogurt instead of cream cheese. Like a firm custard cake. The mushrooms are an accident of my meringue that didn’t work out. But they did. Pleased with it 🍄

I can get behind rewilding thru restoration of large mammals. But @YaleE360 why dismiss cattle when ROTATIONAL grazing restores plant growth, soil health, draws down carbon? Managed properly, they play a critical role in sequestration, species restoration and soil health.
