You can put the email address as part of the "purpose" field as well as plaintext or encrypted in the URL. That gives you the ability to validate the new email address without having to store it anywhere temporarily.

3 hours later, Shopify's monolith is running Ruby 3.3.0 in production! In case anyone needed any more proof of how solid this release is.
