Chicken Chili made with roasted poblanos, jalapeno, red bell pepper, onion, garlic, tomatoes, black beans, hominy, chicken breast and chicken stock. Seasoned with Roasted cumin, ancho powder, chipotle powder. Topped with cheddar cheese, cilantro and green onions.

whole wheat spaghetti with julienned zucchini in a garlic, pesto, white wine sauce, finished with parmesan cheese. I threw in a few left over, sliced sausage links for good measure. Recipe idea from Bon Appetit magazine

Homemade Teriyaki sauce for salmon. Served with brown rice steamed in Dashi with spinach and ginger. Very delicious!

Ravioli with mushrooms and chicken livers simmered in white wine, fresh thyme and rosemary. Finished with olive oil and a little parmesan. Rich and delicious!

I made Peruvian Chicken Legs, inspired by @zimmysnook I used a jarred grilling sauce, but made Zimmys spicy green sauce zimmysnook.ca/spicy-peruvian… I roasted butternut squash with Peruvian spices. What an amazing meal!

Leftover Chicken Tika Masala, added more jarred sauce, shrimp and spinach. Served with brown rice and blueberry chutney. It was even better than the first go around. Yum!
