Air conditioning in the building we purchased is stuffed. Need a crane to get the new one on the roof🤯. That wasn’t in the budget.
Put final plans out to tender for fit out. Gave selected contractors 2 weeks to tender. All indicated they would quote, none responded at all! Put it out again to 2 more builders for 2 weeks. Have one quote back that was 50% above budget.

Hired a chef today! Experienced senior and loyal. Huge deal, they are going to help with kitchen layout and Design menu, huge weight off the shoulders. Now we need a really dedicated somm.
We are going to use some enomatic machines at the #winebar. Any experience with them out there? The local distributor is huge on service and I have a good level of confidence.
Made a job offer for a head chef today to start the hiring for the #winebar. It’s actually my cousin but i feel we are only 50% chance he will take the role. Here’s hoping he accepts as we need his experience or someone like him shortly.

I am in week 3 of #WSET3 with 2 colleagus who will co-own the wine bar. We havent done 1 or 2 and the instructor is understanably irritated by this. I have been drinking and learning about wine for 10 years including some univeristy study so I feel comfortable.
I started a blog to record my thoughts and emotions throughout the process and also the decisions and challenges, may even be brave enough to share this soon.
