Kale also holds its structure so can last longer in the fridge in prepared ready-to-eat salads. Dressing - juice of 1/2 lemon, 1 clove garlic chopped, 1/3c extra virgin olive oil. Shake and enjoy. So good.

If you’re counting on leafy #greens to be a #plantbased source of #calcium, choose #kale over spinach. It’s lower in oxalates, anti-nutrients that reduce calcium absorption. Even better, eat a variety of green, leafy vegetables.
