I wrote a (short) thing on the history of Mexican food’s popularity/diversity in NYC from the 1980s on, and the disturbing idea that it be cheap to be “authentic”. This cuisine is valuable and not to be taken for granted. It took time, labor, risk, and entrepreneurship to exist.
